Beef and Bean Soft Tacos

I've been cooking a lot lately and wanted to share some of our favorites.

Beef and Bean Soft Tacos
1 1/2 cup reduced-sodium beef broth
1 tsp. chilli powder
1 lb. flank steak, trimmed
3/4 cup chunky salsa
1/2 cup rinsed and drained canned black beans
1/4 cup fresh cilantro leaves
12 (7 inch) flour tortillas, warmed
1/4 cup light sour cream

1. Whisk together the broth and chili powder and put in crock pot. Add the steak, cover and cook 4 to 5 hours on high or 8 to 10 hours on low until the steak is fork tender

2. Transfer steak to cutting board and discard all but 1/4 cup of broth. With 2 forks, finely shred the beef. Return to slow cooker and put in the broth, salsa, black beans and cilantro. Cook on high until heated through, about 5 minutes.

3. Top each tortilla evenly with beef mixture and sour cream and serve with extra salsa if desired.

Yummy!
