Penne with Bacon, Cheese and Tomato
2 cups penne pasta
2 tbsp. all purpose flour
1 cup fat free milk
4 center cut bacon slices
2 minced garlic cloves
1 cup shredded Gryuere cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh basil
1/2 (6 ounce) package fresh baby spinach (about 3 cups packed)
1 pint grape tomatoes
3 tbsp. fresh parmesan chesse
1. Cook pasta according to package directions, omitting salt and oil
2. While pasta cooks, place flour in small bowl and gradually add milk and whisk until well blended
3. Cook bacon until crisp. Chop into pieces. Remove from pan and leave 1 tsp of grease in pan and add garlic and saute for 30 seconds. Add milk mixture and cook over medium heat until thick, about 4 minutes. Add Gruyere, salt and pepper, stirring until cheese is melted.
4. Combine pasta, cheese sauce, bacon, basil, spinach and tomatoes in large serving bowl and sprinkle with parm. cheese
Servings: 7 WW points 5 per serving
