My absolute favorite salad right now!
Frisee and Grape Salad with Walnuts and Blue Cheese
3/4 cup Zinfandel Vinegar
1/3 cup Shallot, finely chopped
1/2 cup Grapeseed Oil
Frisee and Mixed Greens
Mixed Grapes, halved
Toasted Walnuts, roughly chopped
Crumbled Blue Cheese
Kosher Salt and Freshly Ground Black Pepper
*Combine the vinegar and shallot in a bowl. Slowly whisk in the grapeseed oil. Add more to taste if too acidic
*Toss all salad ingredients in a large bowl. Serve with vinaigrette on the side.
Note: Serving it this way allows you to eat the salad the next day as leftovers. If that is not your concern, the more proper way to serve it is to toss salad greens with just enough of the vinaigrette to coat the leaves. Season with salt and pepper. Toss in remaining ingredients and serve immediately.
